About this place
Steam curls from generous mounds of toppings over a gentle broth layered with seafood notes: the Nagasaki champon is the primary draw at Matsuchan. Cabbage, bean sprouts, pork, shrimp, squid, clams, and fish cakes crowd the bowl, contributing savory depth to the pale, creamy paitan broth. Thick, substantial champon noodles carry the soup well, making for an unpretentious and restorative bowl from start to finish.
Beyond the signature champon, the noodle repertoire remains broad. A robust tonkotsu-based tanmen seasoned with garlic and pepper, a spicy vegetable ramen laden with produce, and Nagasaki sara udon tossed in thick sauce give diners plenty of leeway depending on their appetite.
Perched at the top of a flight of stairs in Nishi-Nippori, the dining room retains a comfortable Showa-era patina. It functions equally well for a straightforward lunch or an evening beer alongside gyoza and stir-fried dishes. Payment is cash only, making it the sort of neighborhood spot best visited with coins at the ready.
